German Apple Pie

I'm always incredibly impressed when people bake from memory without consulting their iDevice or cook book. What I love most about this recipe (other than the taste) is how simple the batter recipe is...one of everything...I think I can manage that.

Final product (note the disappearing stencil) 

Filling: 
8-10 Apples 
1tbs Cinnamon Sugar 

Batter: 
1 c Sugar 
1 c Flour 
1 Egg 
1 stick of Butter (room temp) 
1 tsp Vanilla

Preheat the oven to 350F. For assembly, simply peel and slice the apples. Next sprinkle with cinnamon sugar. Combine the batter ingredients and crumble over the apple filling. Bake the pie for 45 minutes to 1 hour or until golden brown. Let rest for 10 minutes and serve with vanilla ice cream!

Breakfast for Two



Lauren and I have perfectly staggered exam schedules this fall so we take turns spoiling each other while the other is busy studying. This weekend Lauren is preparing for her renal exam so I treated her to a delicious morning of Rye French Toast! 


the goods: four eggs, skim milk, cinnamon, nutmeg, vanilla extract



soaked in batter and plopped into a pan of perfectly browned butter


extra cinnamon sugar on top and maple syrup


finished off with a Charlie Brown "Good Grief" mug of coffee 


The rye bread is from Metropolitan Bakery and I cannot recommend stopping by here enough! It's quickly becoming a Sunday ritual to swing by for two coffees, an almond croissant to split,  and a loaf bread for the week.
