German Apple Pie
I'm always incredibly impressed when people bake from memory without consulting their iDevice or cook book. What I love most about this recipe (other than the taste) is how simple the batter recipe is...one of everything...I think I can manage that.

Filling:
8-10 Apples
1tbs Cinnamon Sugar
Batter:
1 c Sugar
1 c Flour
1 Egg
1 stick of Butter (room temp)
1 tsp Vanilla
Preheat the oven to 350F. For assembly, simply peel and slice the apples. Next sprinkle with cinnamon sugar. Combine the batter ingredients and crumble over the apple filling. Bake the pie for 45 minutes to 1 hour or until golden brown. Let rest for 10 minutes and serve with vanilla ice cream!

Vegan Cupcakes
Recipe:
1 3/4 c all-purpose flour
1 tsp baking soda
1 1/2 c sugar
1/2 c chopped walnuts
1/4 c unsweetened apple sauce
1/4 c soy yogurt
1/4 c vegetable oil
1/2 tsp vanilla extract
1 c fresh raspberries
Mix together dry ingredients. In another (bigger) bowl mix together the applesauce, soy yogurt, vanilla, and oil. Add 1/2 c raspberries and stir until partially broken. Next slowly add the dry ingredients to the wet ingredients until there is a smooth uniform consistency.
Pour batter into a non-stick cupcake tin with liners (fill about 2/3 full). Bake at 350 for 25-30 minutes.
Frosting:
Tofutti Better-Than-Cream-Cheese (whole foods)
1/2 c vegan butter
2 c confectionary sugar
1 tsp vanilla extract
2 tsp lemon juice

Snow Day
Cafe Lutecia is one of my favorite places in Philadelphia period. It's a hole in the wall, french cafe in the Graduate Hospital area. It's owned by a lovely french couple who always make you feel like you're home. Here everything slows down and your only focus for the moment is to enjoy the company and the amazing soup! It was a perfect study break & snow day date.
